175 g castor sugar
3eggs, beaten
150 g self-raising flour
25 g cocoa powder
5 - 6 tbsp orange juice
grated rind of 1 orange

1. Lightly grease a 25 cm/10 inch oven - proof ring mould.

2. In a mixing bowl, whisk together the butter and sugar for about 5-8 minutes.

3. Add the beaten eggs, a little at a time, whisking well after each addition.

4. Fold the flour into the creamed mixture carefully, then spoon half of the mixture into a separate mixing bowl.

5. Fold the cocoa powder and half of the orange juice into one bowl and mix gently.

6. Fold the orange rind and remaining orange juice into the other bowl and mix gently.

7. Place spoonfulls of each of the mixtures alternately into the mould, then drag a skewer through the mixture to create a marble effect.

8. Bake in a preheated oven, 180 C, for about 30-35 minutes until well risen and a skewer inserted into the centre comes out clean.

9. Leave the cake to cool in the mould before turning it on to a wire rack.
